
Getting the Heat Right in Deck Ovens
If you’ve ever tried to get that perfect bake—where the crust is shatter-crisp but the inside is still soft and airy—you know it’s a balancing act. You can’t just blast the oven and hope for the best. That’s why we use short-wave infrared (IR) heaters. Most ovens just heat up the air, but IR is different. It sends energy straight into the food. No middleman.
How it actually works
Here’s the secret: it’s all about the wavelength. Short-wave IR doesn’t just sit on the surface. It actually sinks into the dough and gets those water molecules vibrating deep inside. This means the core of your product heats up fast, so you aren’t left with a burnt crust and a raw center. It’s fast. Really fast. And that means your food spends less time sitting in the chamber, which keeps everything fresher.
The gear we use
We don’t use standard glass for the tubes—it just can’t take the heat. Instead, we go with high-purity quartz. It handles the “thermal shock” of turning on and off all day without cracking. Plus, we fill those tubes with halogen to make sure the filament lasts a lot longer. A quick heads-up on the electrical side: these things pull a lot of power to keep the oven recovering quickly. If you’re setting up a high-density array, make sure your controllers can handle that initial surge of power. Use heavy-duty connectors, too. Trust me, you don’t want your contacts pitting and failing after a few thousand cycles.
The tricky parts
Now, it’s not all plug-and-play. High-intensity heat is powerful, but it’s also picky. If your food is sitting too close to the element, you’ll torch the crust before the middle is even warm. You have to get the distance between the tube and the deck exactly right. It takes a bit of tweaking, but it’s worth it. And one last thing: quartz is fragile. Kitchens are chaotic. People scrub things. Things get bumped. If a staff member is scrubbing the decks too aggressively, those tubes can snap. We always suggest putting in some protective guards. It’s a small addition that saves you from a massive headache during the nightly clean.
